Ingredients:
Here’s how we taco:
🌮 Taco Filling
– 1/2 red onion (finely chopped)
– 1/2 red bell pepper (finely chopped)
– 2 tbsp olive oil
– 1 cup soaked Textured Pea Protein (rehydrated in hot water and drained)
– 1 tsp Mexican spice mix (cumin, coriander, paprika, oregano, salt)
– 100g black beans
– Juice from 1/4 lime
🍅 Pico de gallo, also called salsa fresca
– 1 large tomato or 2 small
– 1/2 red bell pepper
– 1/3 chili pepper
– Handful of fresh cilantro
– Juice from 1/2 lime
🌿 Lime Cream Sauce
– 2 tbsp plant-based sour cream (coconut milk-based)
– Juice from 1/4 lime
Instructions:
Sauté onion and pepper in olive oil. Add rehydrated textured pea protein, spices, black beans, and lime juice – cook until aromatic and golden. Combine salsa ingredients in a bowl. Mix cream with lime juice. Warm the tortilla on the dry pan. Spread lime cream on warm corn tortillas, top with filling and salsa, and serve with lime on the side, cuz there’s never too much lime in Mexican cuisine!
